Chewy Chewy Pasta (Tael-Geul Tael-Guel Pasta)

Ingredients

  • 8 oz Spaghetti Noodles
  • 1/4 cup Soy Sauce
  • 2 tbsp Sugar
  • 4 cloves Garlic Sliced
  • 1 Medium Onion Sliced
  • 4 pcs Sliced Pork Belly or Thick-Cut Bacon Cut to 1/2 inch pieces
  • 1 Korean Chili Pepper (or 1/4 of a Green Bell Pepper) Chopped
  • 3 tbsp Vegetable Oil Omit if using bacon instead of pork belly
  • Parmesan Cheese optional

Instructions

  1. Salt the Pork belly. (Do not salt the bacon)

  2. Stir together soy sauce and sugar.

  3. Boil the spaghetti noodles in salted water until al dente (firm enough to bite)

  4. If using Bacon, cook the bacon until brown and the fat is rendered out. Drain some of the fat and set aside the bacon.

    If using Pork Belly, add vegetable oil to a skillet on medium heat.

  5. Cook the garlic until fragrant and add the onions and cook until translucent.

  6. Add the pork belly and thoroughly cook (or add the bacon) followed by the peppers.

  7. Once the noodles are cooked, do not drain. Instead, transfer noodles to the skillet using tongs. Add about 1/4 cup of the pasta water to the skillet.

  8. Add the soy sauce mixture and fold over the noodles until all the ingredients are mixed.

  9. Serve and top with Parmesan Cheese if desired.

Recipe Notes

You may adjust the soy sauce mixture to your taste.
