Gluten Free / Paleo Chicken Adobo

The traditional Filipino dish with healthy ingredient substitutions to make it paleo-friendly and gluten-free.

Ingredients

  • 1 Tbsp Coconut Oil
  • 1 Medium Onion chopped
  • 6 Cloves of Garlic minced
  • 2 lbs of Chicken Thighs and/or Legs
  • 1/4 Cup Coconut Aminos
  • 1/2 Cup Organic Unrefined Apple Cider Vinegar
  • 4 Whole Bay Leaves
  • 1 Tsp Freshly Ground Pepper
  • 1 Tsp Whole Cloves optional

Instructions

  1. Add coconut oil to sauté pan and add onions and sauté until translucent
  2. Add the garlic and quickly sauté
  3. Add pieces of chicken and brown both sides (about 4 minutes on each side)
  4. Add coconut aminos, apple cider vinegar, bay leaves, pepper and cloves and bring to a boil.
  5. Lower the temperature, cover and simmer for 25 minutes.
  6. Uncover and allow the sauce to reduce by 1/3.
  7. You may choose to skim the fat before serving.

Recipe Notes

This can be made with pork shoulder or pork belly. Increase the simmer time to 35-40 minutes.
