Gluten Free / Paleo Chicken Adobo
The traditional Filipino dish with healthy ingredient substitutions to make it paleo-friendly and gluten-free.

Coconut Aminos

Organic Unrefined Apple Cider Vinegar

Add coconut oil to sauté pan and add onions and sauté until translucent

Add the garlic and quickly sauté
-
Add pieces of chicken and brown both sides (about 4 minutes on each side)

Add coconut aminos, apple cider vinegar, bay leaves, pepper and cloves and bring to a boil.

Lower the temperature, cover and simmer for 25 minutes.

Uncover and allow the sauce to reduce by 1/3.

You may choose to skim the fat before serving.
This can be made with pork shoulder or pork belly. Increase the simmer time to 35-40 minutes.
